Europe’s First Liquid Nitrogen Ice Cream Parlour in Camden

Liquid nitrogen is normally used in astronomy and medicine, but for the first time in Europe, a business in Camden is using the highly reactive chemical to make ice cream. I went down to Chin Chin Laboratories to have a taste.

Ahrash Akbari-Kalhur and his wife Nyisha Weber serve up three flavours at their labs -Madagascan vanilla and 66 per cent Valrhona chocolate as regulars, and a weekly special. This week’s it’s ‘The Elvis’ for Thanksgiving. It’s made with peanut butter and caramelised banana (bacon sugar shards are optional). Previous flavours include saffron with toasted sesame seeds and raspberry and tarragon. For the festive period Ahrash and Nyisha have created an eggnog and rum edition and have mulled wine flavour in the pipe line. A pot of nitro ice cream isn’t cheap at £3.95, but the smooth and creamy texture achieved by the super-fast freezing process is worth every penny.
